Sweet Basil Gin Rickey

Cocktail 1What you need: juice of 1/2 a lime (plus wedges to garnish) – 4 sweet Thai basil leaves (extra to garnish) – 1 measure Bombay Sapphire gin – 1 tsp simple syrup – club soda

What to do: squeeze lime juice into a shaker – add Thai basil, gin, syrup and muddle to release the flavours – add ice and give it a good shake – pour into glass and top with club soda – garnish with basil leaves and lime

Cucumber-Thai Basil Gin and Tonic

FullSizeRenderWhat you need: juice of 1/2 a lime (plus wedges to garnish) – 2 sweet Thai basil leaves (extra to garnish) – 1 thickly cut slice of cucumber, peeled and sliced – 1 measure Bombay Sapphire gin – tonic water

What to do: pour the lime juice and gin into the glass – add the cucumber and Thai basil and muddle for 30 seconds, until they’ve broken up and the cucumber has released it’s juices – fill 3/4 of the way with ice cubes – top with tonic – garnish with a bunch of basil
